So a few weeks ago I was flipping through channels and came across that Food Nanny show on the BYU channel and she was teaching the poor frazzled mom how to make these turkey rolls as her "signature" dish to bring every year to Thanksgiving. I loved the sound of that and started wondering what my signature dish was. I couldn't come up with anything although my husband says my signature dish should be my au gratin cauliflower that he can't ever get enough of. So, in the end, I thought I would just copy her and make these mine. Aren't they adorable!
Easy too. This is all you need to make these little beauties.
First you add 1/4 cup plus 1 tbsp. warm water to 2 tbsp. of yeast. While that's working you heat in the microwave 1 cup of milk. About 90 seconds - before it's scalding.
Meanwhile beat together 3 eggs, 1/2 sugar, and a 1/2 cup oil. Once it comes together add the milk and the water/yeast to the mixer and combine.
This is where I switch to my dough hook and add 3 cups of flour plus 2 tsp. salt. I let it go until it starts to form a ball and then transfer it to a large bowl sprayed with cooking spray.
I don't get very much natural light in my kitchen but I do have some track lighting over the sink so I always put my bread on the counter right under those lights and 2 - 3 hours later the dough has about doubled.
Punch it down, divide it into thirds and roll out one of the thirds into a dinner plate-ish size circle then cut it with a pizza cutter into 8th's.
Then lay one of the triangles over a muffin tin and with some scissors cut slits into the bigger side to make the feathers.
The remainder of the dough I just roll into crescents. I let the dough rest under a clean kitchen towel for about 15 - 20 minutes or until the oven is good and hot. I bake for 5 minutes on the bottom rack then 5-7 minutes on the top rack or until they are golden brown. When they're fresh out of the oven I brush them with a little butter and they are perfect.
Now here is where a picture of the finished product should be but I had to run to get my hair cut this afternoon just as these were coming out of the oven and by the time I got back they were all gone.
Seriously.
I guess that's just proof of how delicious this simple recipe is. Instead, here's a picture of the things Charlie comes up with while I'm busy cooking. Play dough + feathers + googly eyes. His very own turkey!
Food Nanny Turkey Rolls:
2 Tbsp active dry yeast
1/4 cup plus 1 Tbsp warm water
1 cup milk
3 eggs
1/2 cup sugar
1/2 cup canola oil
About 5 1/2 cups flour
2 tsp salt
butter
1. In small bowl combine yeast and water. Cover and let stand for about 10 minutes.
2. Heat milk in microwave until just warm, not scalding.

Beat eggs, oil, and sugar together. Stir in the milk and yeast mixture.
Stir in 5 cups of the flour and the salt until combined. Turn the
dough onto a lightly floured surface and knead to form a moderately soft
dough, still slightly sticky. (I do this all in the Kitchenaid.)
4. Cover with plastic wrap and allow to rise in a warm place until dough is sticky, 2 to 3 hours.
5. Lightly grease a 12 x 18 inch sheet pan and set aside.

Punch the dough down and turn onto a lightly floured surface. Pat with
additional flour if necessary for handling and keep your hands floured.

Divide dough into thirds. Roll one section into a circle about the size
of a dinner plate. With a pizza cutter, cut once down the middle, then
across, then diagonally (just like a pizza) to make eight wedges. Roll
up each wedge from the wide end to the point. Place the rolls point side
down on the prepared pan. Repeat with remaining sections. All rolls
should fit on one pan.
8, Or if making turkey's place onto a greased muffin tin and cut slits into the larger side.
9. Cover with a clean dish towel and let rise until doubled in bulk, about 15 minutes.

Meanwhile, preheat oven to 400. Bake 5 minutes on the bottom rack, then
move to middle rack and bake 5 minutes or until the rolls are light
brown. Remove rolls from oven and brush tops with butter.

Those look wonderful!!! Now I want to see the Food Nanny show about making something your signature because I always get the relish tray and cheese ball with crackers. I would like a change...also the au gratin cauliflower recipe! I met the Food Nanny. She is a wonderful person...loved that opportunity. Great post !
Okay dumb question. Do you put more dough on top of the cut out feathers/head piece? What shape do you use? I am going to steal this from you too. I am in charge of rolls this year. This is going to be fun!
Nope, I don't use any extra dough. I just use that triangle shape over the muffin pan and after a little time they poof up like that. In my opinion though I like the taste of the regular crescent shape better than the turkey's although they are totally adorable. I don't know why.. I'm going to make 6 or eight turkeys to throw in the big roll basket and then make the rest of them into crescent rolls for thanksgiving. Good luck Angela!
That's so interesting that the Food Nanny (don't know who she is) mentioned a signature dish because my aunt and I were just discussing that same idea - hers is a jello salad...I need to think of one...hmmm...those rolls are darling!
